Our main physical infrastructure consists of a food preparation lab, a food analytical lab, and a sensory laboratory. We offer specialized expertise in the following methodologies:

Sensory Lab

  • Gastronomic explorative playground and culinary equipment

Food Analytical Lab  

  • Advanced microscopy techniques e.g., fluorescence confocal and super-resolution (STED, SIM, and more), multi-photon label-free (second harmonic generation (SHG), coherent anti-Stokes Raman scattering (CARS), SRS), video microscopy (spinning disc, SIM). Full imaging infrastructure available via
  • Mechanical texture analysis
  • Rheology (incl. rheo-microscopy, LAOS)
  • Food composition analysis: moisture content, elemental analysis.

Cross-cutting expertise in:

  • Image segmentation, analysis, and quantification
  • Multivariate data analysis and machine/deep learning
  • Spectroscopy and chromatography for food analysis: FT-IR, UV-VIS, GC-MS, HPLC
